Food Science Courses - Level 3 Award in Implementing Food Safety Management ProceduresThis course aimed primarily at owners and/or managers of small and medium sized catering and hospitality businesses will help candidates to implement a food safety management system based on the Codex principles of HACCP.  Each of the seven principles of HACCP is detailed in the context of a catering enterprise.  The controls required to ensure food safety are examined and the use of management tools - such as the Food Standards Agency’s ‘Safer Food Better Business’ pack – are explored.

Duration – 1 day (minimum 6 hours teaching time)

Assessment method – short assignment completed under examination conditions

(Successful candidates will gain exemption from attending part of the CIEH Level 3 Award in Supervising Food Safety in Catering)
